Mexican Spiced Bean & Quinoa Salad | GF


Quick and healthy vegan & gluten-free dinner. This is one of my go-to recipes when I want something delicious, easy and healthy.



Beanoa


Prep: 5-10 minutes

Cooking: 20 minutes

Total Time: 30 minutes



Ingredients:


⦁ 1 tbsp oil

⦁ 2 garlic cloves (minced)

⦁ 5 jalapenos (chopped)

⦁ 2 tins of beans (you can use any type of bean you want, I used mixed beans and black beans)

⦁ 1 can chopped tomatoes

⦁ 200g salsa

⦁ 1 cup quinoa

⦁ 1 tsp cumin

⦁ 1 tsp chilli

⦁ 1 cup water

⦁ Sweetcorn

⦁ 1 Lime

⦁ Coriander


Instructions:


1. Add oil, garlic, jalapenos, beans, chopped tomatoes, salsa, quinoa, chili flakes, cumin, water and a stock cube in a big pot.


2. Stir the ingredients together and let it simmer for 20 minutes on low to medium heat.


*Make sure you stir it once in a while so it doesn't get stuck to the bottom!


3. After 20 minutes has passed add the sweetcorn, coriander and lime juice, mix well and enjoy!


Tips:


⦁ This dish is really good on its own but can also be used as a burrito or taco filling.


⦁ If you want to make it a bigger dish you can add rice, tortilla chips, guacamole or an every day Mexican salad next to it.
