Ciabatta Bread


CIABATTA BREAD


INGREDIENTS

  • ½ cup white bread flour

  • ½ cup whole wheat bread flour

  • 1 ½ teaspoons salt

  • 1 teaspoon instant yeast

  • 2 cups water

  • 1 tablespoon olive oil


INSTRUCTIONS

1. Add flour, yeast and salt in a big bowl and mix well. Gradually add water and mix until it forms a dough (about 5 mins). Without kneading, let it prove for 18 hours at room temperature (make sure the room isn't too warm!).


2. Gently punch out the air in the dough, fold it over a few times and shape into a big slipper on a baking tray. Cover and let it prove for 2 hours.


3. Glaze the bread with water and bake it at 220°C for 35-45 mins.


Tips

Add a tray with boiling water to the bottom of the oven. This will make the bread extra crunchy.

1st day

13:00 - Make the dough

2nd day

7:00- Shape the dough - prove 2 hours

09:00 - Bake the bread
