The perfect dish for those cold autumn evenings. It's comforting, it's classic and it's easy to make.
INGREDIENTS
3 small leeks (chopped finely)
2 tbsp plant butter
700g potatoes (squares)
1 vegetable stock cube
1 litre of water
2 tsp pepper
1 tsp celery salt
200ml plant milk
2 tbsp white wine (optional)
Chives (topping)
INSTRUCTIONS
1. Add plant butter, leek and salt to a large pot, simmer for 10 minutes (or until they're soft).
2. Add garlic and potatoes to the pot, cook for 5 minutes.
3. Now add the remaining ingredients: water, stock, pepper, plant milk and wine and cook for another 20 minutes.
4. Once it's cooked it's time to blend it all together, blend until creamy, add chives on top and enjoy with a piece of your favorite bread!
Tips
Add more plant milk if you want a thinner consistency
