Vegan Brimstone Bread Rolls

Creepy and cool looking Brimstone Rolls, the perfect snack for Halloween or a horror movie night

INGREDIENTS

Rolls

  • 150g strong bread flour

  • 5g sugar

  • 10g salt

  • 20g yeast

  • 330g oat milk (warm)

  • 2-3 tsp red food colouring (The amount you need really depends on which type of food colouring you have, so make sure you are using a good one. I'm using sugarflair food colouring paste.

Topping

  • 1½ cups rice flour

  • 3 tbsp active dry yeast

  • 2 tbsp sugar

  • 2 tbsp sesame oil

  • 1/2 teaspoon salt

  • 1 cup warm water

  • 3-4 tsp black food colouring (the paste needs to be completely black, so add more if this isn't enough)

INSTRUCTIONS

1. Add all the dry ingredients to a big bowl (flour, sugar, yeast and salt) and whisk until it's all combined. Add the warm oat milk and mix until it forms a coherent dough.

2. Knead the dough with your hands for about 10 minutes or so, or use a machine for 5 mins. Add a damp tea towel or cling film on top and let it rest until it's doubled in size. This should take from 30 mins to 1 hour, depending on the temperature in your kitchen.

3. Take the dough out of the bowl and gently punch the air out. Roll it into a big sausage and start by cutting it into 12 pieces. Shape the roll by making big circular movements with your hand. (tip: weigh each roll if you want them all to be the same size)

4. Put a kitchen towel over the rolls and let them proof for 1 hour.

5. Pre-heat the oven to 200 degrees.

6. Add warm water and black food colouring to a bowl and mix well. Add all the remaining ingredients and whisk together until it forms a sticky dough. Let it sit for 10 minutes.

7. Now add the topping to the rolls and let it sit for another 15 minutes, bake the rolls for 20-25 minutes and enjoy!
