Moon Cookies

Extremely soft moon cookies with hints of cinnamon and vanilla. These Moon Cookies go hand in hand with a nice cup of hot chocolate or a chai latte.



INGREDIENTS

  • 350g plain flour

  • 225g white sugar

  • 2 tbsp baking powder

  • 1 tsp salt

  • 2 tbsp cinnamon

  • 1 tbsp vanilla extract

  • 1/4 oat milk (add more if needed)

  • 225g plant butter (room temp)

  • 1/2 tsp orange food colour (add more if you want a stronger colour)



INSTRUCTIONS

1. Add all the dry ingredients in a large mixing bowl and whisk together.


2. Add the wet ingredients to the mixture and mix until it's well combined.


3. Put the dough in a bag or foil and freeze it for 15 minutes.


4. Pre-heat the oven to 180°C.


5. Now it's time to make the cookies, I always weigh each cookie to make sure that they're even (They're about 50g per cookie). Shape them into balls and put them on a baking tray.


6. Bake them for around 10-12 minutes, make sure you keep an eye on them because cookies burn very easily. When they start to turn golden on the sides they should be ready to come out.
