Cake:
200ml vegetable oil
250ml oat milk
1 tbsp vanilla extract
2 tbsp Orgran (egg replacer)
300g plain flour
150g white sugar
2 tsp baking powder
1 tsp baking soda
3 apples, chopped into large chunks
Streusel Topping:
100g vegan block butter (melted)
100g white sugar
260g plain flour
1 tsp cinnamon
a few drops of vanilla essence
Instructions:
Preheat your oven to 180°C (356°F). Grease or line a 9x9-inch baking dish with parchment paper and set aside.
In a medium bowl, combine the melted vegan butter, white sugar, plain flour, cinnamon, and vanilla essence. Mix until crumbly and place the mixture in the fridge to chill while you prepare the batter.
In a large mixing bowl, whisk together the vegetable oil, oat milk, vanilla extract, and Orgran egg replacer until smooth and well combined.
Sift in the plain flour, white sugar, baking powder, and baking soda. Mix until just combined, avoid overmixing to keep the batter light and fluffy.
Gently fold in the chopped apples, ensuring they’re evenly distributed throughout the batter.
Pour the batter into the prepared baking dish (baking paper + a little drizzle of neutral oil), spreading it out evenly. Remove the streusel from the fridge and crumble it evenly over the top of the batter.
Place the dish in the preheated oven and bake for 20–25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10–15 minutes before slicing. Serve warm with a drizzle of vegan caramel, a scoop of vegan ice cream, or enjoy it on its own with a cup of tea or coffee.
