Vegan Biscoff Filled Cookies

Vegan Biscoff Stuffed Cookies

The most heavenly Vegan Biscoff Filled Cookies. Crunchy on the outside and nice and gooey on the inside. Oh, and did I mention that these are GIANT cookies!?


Prep-time: 10 minutes

Baking time: 20-35 minutes

Servings: 5 giant cookies


INGREDIENTS

  • 150g plant butter

  • 150g white sugar

  • 150g dark brown sugar

  • 70ml oat milk

  • 2 tbsp vanilla essence

  • 400g plain flour

  • 1 tsp baking powder

  • 1/2 cup chopped biscoff cookies

  • 1 jar Biscoff Spread (for the filling)

  • 1 pack Biscoff Cookies



INSTRUCTIONS

1. Start by prepping the biscoff filling. Spoon out 1/4 cup of Biscoff Spread on a plate lined with baking paper (make 5 in total). Place them in the freezer for about 1 hour. They are easier to deal with when they are frozen.


2. Add sugar, plant butter and vanilla to a large mixing bowl, mix well. Then add the remaining ingredients and mix until everything is incorporated. Add the dough to a smaller bowl and put it in the freezer for 30 minutes.


3. Pre-heat oven to 180°C.


4. Crush 10 biscoff cookies, so it almost becomes like a thick flour, add to a medium-sized tray, set aside.


5. Now it's time to shape the biscoff cookies. Scoop out roughly 1/3 cup of cookie dough, flatten it using your hands. Place the Biscoff filling on top and close it. Make sure it's closed completely because you don't want the filling melting out when they're baking.


6. Bake the cookies for 20-35 minutes.


7. When the cookies are done, take them out and add 2 halved biscoff cookies on top of each cookie (see video). Let them cool for 10 minutes and enjoy!
