INGREDIENTS
500 g strong bread flour
30 g white sugar
a dash of salt
7 g instant yeast
350 ml (luke-warm water)
Filling
1/2 cup plant butter
1/4 cup white sugar
1 and 1/2 cup blueberry jam (tbh, the more the better)
Icing
2 cups icing sugar
1-5 tbsp water (use a little at a time so it's easier to adjust the thickness)
a drop of purple food coloring (the amount depends on the type of coloring you have)
a few drops of blueberry essence
INSTRUCTIONS
1. In a stand mixer, combine all the ingredients (except water) and whisk briefly. Set the mixer to a slow speed and gradually add water until the dough comes together. Knead the dough on medium speed for 8-10 minutes.
2. Place clingfilm on top of the bowl with the dough and let it prove for 1 hour, or until it has doubled in size.
3. Once the dough has risen, transfer it to a well-floured surface and roll it out into a large rectangle measuring approximately 36x20 cm, similar to the size of a kitchen towel.
4. Spread butter evenly over the dough, followed by a layer of blueberry jam, and sprinkle sugar on top. Use a pizza cutter to cut 6 lines in the dough, as shown in the video for reference. Roll up the dough tightly and place the rolls in a baking tin. Allow them to rise for another hour.
5. Preheat your oven to 180°C. While the oven is heating, prepare the icing by mixing icing sugar, water, and food coloring in a bowl. Set aside.
