The perfect afternoon treat to have with a cup of tea. This Vegan Cinnamon Cake is soooo scrumptious! It's soft on the inside and incredibly crunchy on the outside.
Prep-time: 10 minutes
Baking time: 35-45 minutes
Servings: 1 cake
INGREDIENTS
2 cups plant butter (melted)
250g white sugar
2 flax eggs
2 tbsp vanilla essence
400g plain flour
1 tbsp cinnamon
1 tsp baking powder
1/2 tsp salt
Icing:
1 cup icing sugar
1 tbsp hot water
INSTRUCTIONS
1. Pre-heat the oven to 180°C.
2. Add butter to a pot and melt it, set aside.
3. Add flour, baking powder, salt cinnamon to a large mixing bowl and mix well, then add the butter and the flax eggs and mix again until its all incorporated.
4. Add half of the batter to an oiled baking tray, then sprinkle cinnamon and brown sugar on top, the more the better (check video above). Then add the remaining batter and spread it out.
5. Finish the cake by sprinkling cinnamon and sugar on top.
5. Tap the baking tray on the kitchen counter a few times to remove air bubbles. Bake the cake for 35-45 minutes. Remember to check every 15 minutes, to make sure it's not cooking too fast (use a knife or a tooth pick).
