These drool-worthy cookie dough brownies are rich, fudgy and packed with cookie dough chunks. This recipe is very easy to make, and I bet you have everything you need to make them already sitting in your kitchen.

Servings: 1 Brownie Cake (9 slices)
INGREDIENTS
Brownies
200 g plain flour
25 g cocoa powder
150 g white sugar
200 g dark chocolate (melted)
100 ml neutral oil
200 ml oat milk
Cookie Dough Chunks
115 g plant butter
100 g sugar
2 tbsp aquafaba
1 tbsp vanilla extract
150 g plain flour
30 g funfetti sprinkles
INSTRUCTIONS
Start by making the cookie dough chunks. Add all ingredients listed above into a bowl and mix well until fully combined. Add the cookie dough mix to the freezer to cool while you do the rest.
Preheat oven to 180°c degrees.
Now it's time to make the chocolate syrup. Add chocolate, oil, sugar and milk to a a small/medium sized bowl and place it in a water bath. You can also use the microwave if you have one. Heat until everything has completely melted and is smooth. Turn off the heat and leave it while you prepare the rest.
Now add the rest of the ingredients to a medium sized mixing bowl, followed by the chocolate syrup you just made. Stir until the batter is completely smooth. You need to work fast though, if the dough cools too much it turns fudgy.
Add the batter to a baking tray (mine is 30x17x6), add chunks of cookie dough to the top, and push them down. Bake for 20-25 minutes at 180°C. Do keep an eye on it, you don't want to overbake it.
After it's cooled down a bit, add it to the fridge and leave it for a few hours, make sure you don't skip this step. The brownie needs to be set fully before you cut into it.
