Soft, fluffy, and buttery, these homemade vegan custard rolls will melt in your mouth and make you want to eat them all. They're really easy to make and they only need 8 ingredients. Let's get baking!

INGREDIENTS
400g strong bread flour (add a little more if needed)
7g instant yeast
200ml oat milk
180g vegan butter
2 tbsp vanilla essence
100g white sugar
zest of 1 lemon
vegan custard (I used Wicked Kitchen)
2 tbsp vegan butter (melted, for brushing)
INSTRUCTIONS
1. Start by heating the oat milk in a small pot, it needs to be around 38 degrees (warm not hot). Add yeast and sugar, and give it a good whisk. Leave to rest for 10 minutes.
2. Add flour, lemon zest and vanilla essence to a large mixing bowl, and put it on low speed while you gradually add the oat milk mixture. Then slowly add the butter until it's fully incorporated into the dough. Let it mix on medium speed for 5-8 more mins, then prove for 1 hour or until double in size.
3. Punch the air out of the dough and divide into 8 pieces. Shape them with the palm of your hands until they're nice and round. Then use a rolling pin to make them flat (see video for reference) then add them to a baking tray.
4. Before they rise for the second time, take something round (like a coffee tamper or the bottom of a glass) and push it down in the middle of the roll. Add plastic foil on top and let it rise until it's doubled in size.
5. When all the rolls look nice and big, it's time to heat the oven. While the oven is getting hot, use the coffee tamper or glass to push it down again, just to make sure we have space for the custard.
6. Then add the custard into the middle of the roll and finish off by brushing melted butter on top. Now bake them for 15-25 minutes, turn the tray halfway through so they all get a nice and even bake.
7. When the rolls have cooled down, add icing sugar on top, more custard in the middle and top it with strawberries.
