This vegan choc chip cookie recipe is made with white chocolate, dark chocolate and got small chunks of chopped pecans. They're crunchy on the outside, and gooey in the middle. They are guaranteed to melt in your mouth.
Prep time: 5 minutes
Baking time: 10-12 minutes
Servings: 10-12 cookies
INGREDIENTS
140 g vegan butter
270 g light brown sugar
50 ml oat milk
2 tsp vanilla
190 g plain flour
1/2 tsp baking powder
60 g vegan white chocolate (use half in the dough and half on top of the cookies)
60 g vegan dark chocolate (use half in the dough and half on top of the cookies)
10 g pecans (chopped)
INSTRUCTIONS
Preheat oven to 180°c degrees.
Add vegan butter and sugar to a medium-sized bowl, and give it a whisk.
Now add the rest of the ingredients, and mix until fully incorporated.
Use an ice cream scooper or tablespoon to scoop out the dough. It should be shaped like a small ball.
Add more chocolate on top of the cookies and bake for 10-12 minutes. Let them cool for 5 minutes and enjoy!
