It wouldn’t be a proper Christmas without a mince pie now would it? This traditional English dessert is packed with flavours, and makes you want to cosy up with a hot cup of chocolate and your fave Christmas movie.
Prep-time: 10 minutes
Baking time: 20-25 minutes
Servings: 6-8 small mince pies
INGREDIENTS
1/2 cup brown sugar
50 ml rum
150g fruit mix (I used Tesco Mixed Fruit With Cranberry And Apricots)
2 apples (1 grated and 1 chopped into small cubes)
1/2 orange (zest + juice)
1 tsp all-spice
1 tsp nutmeg
1 tsp cinnamon
1 tsp ginger
1 pack vegan shortcrust pastry
INSTRUCTIONS
1. Start by grading 1/2 apple into a medium-sized bowl. Squeeze the juice out of the apple pulp, as much as you can.
2. Now add the rest of the ingredients to the bowl and give it a mix until everything is incorporated. Add the filling to the fridge for an hour.
3. Preheat the oven to 200 degrees.
4. Roll out your pastry dough until it's quite thin, about 3 mm. Use a glass to cut out circles, then add them to the metal muffin tins and push them down using your fingers. Then use the glass again to cut out the lids for the pies and set them aside.
5. Add the filling to the pies, add the lids and push them down using your fingers and a fork. You can also use a cup to push it down so it cuts off excess dough.
6. Brush them with oat milk and sprinkle sugar on top, bake for 20-25 minutes at 200 degrees and enjoy!
