Happy Pancake day everyone or Shrove Tuesday as they call it here in the UK. To celebrate this day, I've created a list with 4 of my favourite pancake recipes for you to try.
I would recommend using a non-stick pan when cooking pancakes, it makes the whole process easier ;)
1. Chocolate Pancakes With Biscoff Drip
INGREDIENTS
180g plain flour
30g cocoa powder
250ml oat milk
1 tbsp apple cider vinegar
1 tsp baking powder
1/2 tsp salt
2 tbsp oil
1 tbsp vanilla
INSTRUCTIONS
1. Add all dry ingredients in a bowl and mix, set aside.
2. Add oat milk, apple cider vinegar, oil and vanilla extract to a jug, mix well and leave for 5 minutes.
3. Mix dry and wet ingredients together and mix well until it's completely smooth with no lumps.
4. Leave the dough to rest for 5-10 minutes, cook on medium heat and turn them over when bubbles appear.
2. Fluffy American Pancakes
INGREDIENTS
1 cup plain flour
2-3 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 tbsp vanilla extract
1 cup soy milk
1 tsp apple cider vinegar
INSTRUCTIONS
1. Add all dry ingredients in a bowl and mix (flour, sugar, baking powder, salt), set aside.
2. Add soy milk, apple cider vinegar and vanilla extract to a jug, mix well and leave for 5 minutes.
3. Mix dry and wet ingredients together and mix well until it's completely smooth with no lumps.
4. Leave the dough to rest for 5-10 minutes, cook on medium heat and turn them over when bubbles appear and they start to look golden.
5. Enjoy with syrup.
Voila!
3. Lemon & Vanilla Pancakes
INGREDIENTS
50g plant butter (melted)
150g plain flour
1 tsp baking powder
4 tbsp sugar
4 tbsp vanilla extract
1 tbsp lemon zest (grated)
1/4 tsp salt
250ml oat milk (add more if needed)
INSTRUCTIONS
1. Melt the plant butter in a small pot, set aside to cool.
2. Add all the ingredients to a large bowl and mix well, then add the cooled butter and let it rest in the fridge for 10 minutes.
3. Add a little bit of butter to a large pan, add the pancake batter, cook on medium heat until its golden on both sides.
4. Enjoy with icing sugar and lemon zest on top.
4. Traditional Scandinavian Pancakes
INGREDIENTS
150g plain flour
1 tsp baking powder
4 tbsp sugar
2 tbsp vanilla extract
50g plant butter (melted)
250ml oat milk (add more if needed)
1/4 tsp salt
INSTRUCTIONS
1. Melt the plant butter in a small pot, set aside to cool.
2. Add all the ingredients to a large bowl and mix well, then add the cooled butter and let it rest in the fridge for 10 minutes.
3. Add a little bit of butter to a large pan, add the pancake batter, cook on medium heat until its golden on both sides.
4. Enjoy with sugar and strawberry jam.
