Perfect for when you crave sushi but don't want to spend hours in the kitchen. Customize the bowl with all your favorite vegetables.
Prep-time: 10 minutes
Servings: 2 portions
INGREDIENTS
2 cups cooked sushi rice (cook according to pack)
1 avocado (sliced)
1/2 cucumber (sliced)
1 pack of tofu
1/2 carrot (thinly sliced)
A handful green beans (cooked)
2 tbsp white and black sesame seeds
Nori sheets (options)
Tofu Marinade
3 tbsp soy sauce
1 tbsp rice vinegar
1 tsp brown sugar
1 garlic clove (minced)
INSTRUCTIONS
1. Start by marinating the tofu. Preferably the night before. Add all the tofu marinade ingredients to a tub or a plastic bag, followed by the tofu. Leave to marinate for as long as you can.
2. Cook the rice according to the pack instructions. Set aside to cool.
3. While the rice is cooling down it's time to prep the vegetables. Cut all the vegetables into whatever shape you prefer. Add them to a bowl and set aside.
4. When the rice has cooled down, use a tablespoon to shape it into small balls. Then cover them in sesame seeds and add them to your plate.
5. The last step is to griddle the tofu on medium heat, this will take about 10 minutes.
6. Add the tofu to your bowl, followed by a drizzle of sriracha and enjoy :-)
